    Preparation Steps

    1

In a small saucepan, combine the water and sugar. Heat over medium heat, stirring until the sugar is completely dissolved. This will create a simple syrup.

    2

Allow the simple syrup to cool to room temperature.

    3

Juice the limes and zest them. Strain the juice to remove any seeds or pulp.

    4

In a medium bowl, combine the cooled simple syrup, lime juice, lime zest, and vanilla extract.

    5

Pour in the heavy cream and mix thoroughly until well combined and creamy.

    6

Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions.

    7

If you don't have an ice cream maker, pour the mixture into a shallow dish and place it in the freezer. Every 30 minutes, stir with a fork to break up any ice crystals. Repeat this process for 3-4 hours.

    8

Before serving, let the ice cream sit at room temperature for a few minutes to soften slightly for easier scooping.
