300 g Tofu
200 g Quinoa
400 ml Coconut Milk
2 tsp Curry Powder
1 Lime
20 ml Olive Oil
2 cloves Garlic
10 g Ginger
10 g Fresh Cilantro
10 g Toasted Sesame Seeds
1 tsp Salt
1 tsp Black Pepper

    Cook the quinoa in twice the amount of water for 15 minutes, then let it cool.

    Dice the tofu, drizzle with olive oil and lime juice, and pan-fry until golden brown. Set aside.

    Mince the garlic and ginger, then sauté in olive oil in a pan until fragrant.

    Add the coconut milk mixed with the curry powder and bring to a simmer. Cook for 5-7 minutes, or until the sauce has thickened.
