Chop the cooked lobster meat and mix it with the minced red onion, garlic, egg, breadcrumbs, parsley, lemon juice, salt, and black pepper.
Form the mixture into 4 equal-sized lobster patties and refrigerate for 15 minutes to firm up.
In a hot skillet or on a grill, cook the lobster patties in a little olive oil for 3-4 minutes on one side, then flip and cook for another 3-4 minutes, or until golden brown.
Cut the hamburger buns in half, butter them, and toast in a skillet until golden brown.
Spread mayonnaise and Dijon mustard on the bottom half of each bun, then place a lettuce leaf on top.
Place the lobster patty on top of the lettuce, followed by tomato slices and cucumber.
Spread a little extra mayonnaise on the top half of the bun before closing the burger.
Serve immediately, garnished with fresh lemon wedges and a light salad.
