400 g Fresh lychees
200 ml Water
120 g Granulated sugar
2 tbsp Fresh lime juice
5 Mint leaves (optional)

    Peel the lychees, remove the pits, and purée in a blender until completely smooth.

    In a medium saucepan, combine the water and sugar. Heat over medium heat, stirring until the sugar is completely dissolved. This should take about 5 minutes.

    Let the sugar syrup cool, then stir in the lychee purée and lime juice.

    Pour the mixture into a shallow dish and place in the freezer.

    Every 30 minutes, scrape the sorbet with a fork to create an icy texture. Repeat this process 3-4 times, until completely frozen.
