Heat the milk and stir in the sugar, vanilla sugar, and ground poppy seeds.
Add the grated lemon zest and mix until the poppy seed filling is smooth.
Lay out the strudel dough sheets and brush with melted butter. Sprinkle with breadcrumbs, then spread the poppy seed filling evenly over the top.
Carefully roll up the strudel dough sheets and place on a baking sheet lined with parchment paper.
Brush the top of the strudel with melted butter and bake at 350°F (180°C) until golden brown, about 30-35 minutes.
Let cool before serving, then dust with powdered sugar.
