Freshly baked Yemeni malawach layered flatbread

Malawach - Yemeni Flatbread

Malawach is a traditional Yemeni flatbread that has become known worldwide thanks to the Jewish community there. Its layered, buttery texture is reminiscent of both pancakes and puff pastry. It is most often eaten for breakfast with honey or tomato sauce, but is also served in a savory version with eggs and spices. Malawach is the perfect complement to Middle Eastern dishes and is becoming increasingly popular in modern cuisine.

    Preparation Steps

    1

In a large bowl, combine the flour, salt, and sugar.

    2

Gradually add the water and oil (or melted butter), then knead the dough until it's smooth and elastic.

    3

Divide the dough into 6 equal portions and shape them into balls.

    4

Cover the dough balls with a kitchen towel and let them rest for 30 minutes.

    5

Roll out one dough ball thinly, then spread a layer of melted butter over it. Fold it into layers, creating a small parcel.

    6

Repeat this process with all the dough balls, then let them rest for another 15 minutes.

    7

Heat a skillet over medium heat. Add a little butter or oil, then cook the malawach flatbreads one at a time for about 2-3 minutes on one side, then flip and cook for another 2 minutes until golden brown.

    8

Repeat the cooking process with the remaining dough. Serve with honey, tomato sauce, or eggs.
