Manakish

Manakish is one of the most well-known flatbreads in the Middle East, often enjoyed for breakfast or as a snack. The distinctive, piney and citrusy flavor of the zaatar spice blend perfectly complements the cheese, especially akkawi or feta. Manakish is traditionally made in an oven similar to a tandoor, but it can easily be made at home. It is best served sprinkled with fresh mint or parsley.

300 g All-purpose flour
200 ml Water
10 g Yeast
5 g Salt
20 g Zaatar spice blend
50 ml Olive oil
200 g Lebanese cheese (akkawi or feta)
10 g Fresh mint or parsley

    Preparation Steps

    Prepare the dough: combine the flour, water, yeast, and salt. Knead until you have a smooth dough, then let it rise for 1 hour in a warm place.

    Combine the zaatar spice blend with the olive oil to form a thick paste.

    Roll out the dough into a round or oval shape and evenly spread the zaatar-olive oil mixture over it.

    Crumble the Lebanese cheese or arrange thin slices of cheese on top of the dough.

    Preheat the oven to 430°F (220°C) and bake the manakish for 10-12 minutes, until the dough is golden brown and the cheese is melted.

    After baking, sprinkle with fresh mint or parsley. Serve warm or at room temperature.
