Lebanese manakish with za'atar spice and cheese

Manakish – Lebanese Flatbread with Cheese and Za'atar

Manakish is one of the most well-known flatbreads in Lebanese and Middle Eastern cuisine, often enjoyed for breakfast or as a light meal. The za'atar spice blend – consisting of thyme, sesame seeds, and sumac – gives this bread a unique, aromatic flavor. The cheese version is often made with feta or Akkawi cheese, which perfectly complements the spicy flavors. If you want to discover the traditional flavors of the Middle East, manakish is an excellent choice!

    Preparation Steps

    1

In a large bowl, combine the flour, salt, and dry yeast. Add the warm water and olive oil, and knead until you have a smooth and elastic dough. Cover and let rise for 1 hour.

    2

While the dough is rising, prepare the topping. In a bowl, mix the za'atar spice blend with a little olive oil to form a thick paste.

    3

Divide the risen dough into smaller portions, then roll out each portion into a thin, circular shape.

    4

Spread the za'atar paste on the dough, then sprinkle with grated mozzarella and feta or Akkawi cheese.

    5

Sprinkle with sesame seeds, then place the manakish on a baking sheet lined with parchment paper.

    6

Bake in a preheated oven at 430°F (220°C) for 10-12 minutes, or until the crust is golden brown and the cheese is melted.

    7

Before serving, sprinkle with chopped fresh parsley and serve with fresh lemon wedges. Enjoy!
