In a medium saucepan, pour the apple cider, add the honey, cinnamon stick, and cloves. Stir until the honey is completely dissolved.
Add the mandarin orange segments to the saucepan, and gently warm the mixture over medium heat. Tip: Avoid boiling to preserve the mandarin's natural sweetness and aroma.
Add 2 tablespoons of freshly squeezed lemon juice, which will balance the mandarin's sweetness and add a touch of freshness to the drink.
Stir the cider well, and let it steep for 5 minutes off the heat to allow the flavors to fully meld.
Strain the cider before serving, and use the mandarin segments as a garnish in the glasses. Garnish with fresh mint sprigs.
