In a small saucepan, combine the mango puree, lime juice, and honey.
Add the red chili flakes, grated ginger, and soy sauce, and stir until smooth.
Pour in the water, and simmer over low heat for 10-12 minutes, or until the sauce has slightly thickened.
Remove from the heat and stir in the chopped cilantro.
Serve with grilled chicken, fish, or roasted vegetables.
