Peel the ripe mango, cut the flesh away from the pit, and place it in a blender.
Add the tahini, lime juice, honey, finely grated garlic, and a pinch of ground ginger.
Pour in 50 ml of water and blend until smooth. For a thicker sauce, add less water.
Taste and season with salt or more lime juice, if desired, for a brighter flavor.
Refrigerate for at least 15 minutes to allow the flavors to meld, then serve with grilled meats, salads, or vegetables.
