500 ml Heavy Cream
250 ml Milk
100 g Granulated Sugar
1 Vanilla Bean
6 Gelatin Sheets
200 g Mango
50 g Powdered Sugar
1 tbsp Lemon Juice
50 ml Water

    Soak the gelatin sheets in cold water for 5 minutes to soften.

    In a saucepan, heat the heavy cream, milk, and granulated sugar over medium heat, but do not bring to a boil.

    Halve the vanilla bean lengthwise, scrape out the seeds, and add them to the cream mixture.

    Remove from heat, squeeze out the excess water from the gelatin sheets, and stir them into the warm cream mixture until completely dissolved.

    Pour the panna cotta into small glasses or molds and refrigerate for at least 4 hours, or until set.

    Meanwhile, prepare the mango sauce: blend the mango with the powdered sugar, lemon juice, and water, then cook for 5-7 minutes, or until slightly thickened.
