Wash, peel, and halve the mango. Remove the pit and slice the mango into smaller pieces. Tip: If the mango is very ripe, you can scoop out the flesh with a spoon.
In a medium saucepan, pour the apple cider. Add the honey, cinnamon stick, and cloves. Stir until the honey is dissolved.
Add the mango pieces to the saucepan and warm the cider over medium heat. Tip: Do not boil, to preserve the natural mango flavor.
Add 2 tablespoons of freshly squeezed lemon juice for a refreshing taste.
Stir well, and let it sit for 5 minutes off the heat to allow the flavors to meld.
Before serving, strain the cider. Arrange the mango pieces in the glasses as a garnish. Garnish with fresh mint.
