In a large bowl, combine the flour, powdered sugar, and a pinch of salt. Add the cold butter, cut into cubes, and rub it into the flour mixture until it resembles coarse crumbs.
Add the egg yolk and vanilla extract, then knead until a smooth dough forms. Wrap in plastic wrap and chill in the refrigerator for 30 minutes.
Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
On a lightly floured surface, roll out the dough to a thickness of 3-4 mm. Cut out cookie shapes using your desired cookie cutters.
Roll out the marzipan paste thinly and cut out circles to match the size of the cookies. Place the marzipan rounds in the center of each cookie, pressing down gently.
Bake the cookies in the preheated oven for 10-12 minutes, or until lightly golden brown. Let them cool completely on the baking sheet.
Melt the dark chocolate and drizzle it over the tops of the cookies for decoration. Allow the chocolate to set completely.
