In a large bowl, whisk together the flour, granulated sugar, baking powder, and matcha powder.
Add the eggs, milk, and oil to the dry ingredients and mix until just combined and smooth.
Pour the batter into a greased and floured cake pan. Bake in a preheated oven at 350°F (180°C) for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
While the cake is cooling, prepare the frosting. In a bowl, combine the mascarpone cheese, powdered sugar, and vanilla extract. Gently fold in the whipped heavy cream.
Once the cake has cooled completely, slice it in half horizontally. Spread the mascarpone frosting between the layers. Frost the top of the cake with the remaining frosting and smooth it out.
Dust the cake with matcha powder or garnish with fresh berries such as strawberries or blueberries.
Refrigerate the cake for at least 2 hours to allow the flavors to meld and the frosting to set.
