Finely chop the onion and garlic. Heat the oil in a skillet over medium heat, then sauté the onions until softened.
Add the ground pork to the skillet, season with salt, pepper, and Hungarian sweet paprika. Cook until the pork is browned all over. Remove from the heat and let it cool slightly.
Roll out the puff pastry on a lightly floured surface. Evenly spread the cooled meat mixture over the pastry.
Sprinkle with finely chopped fresh parsley. Roll the pastry up tightly, like a roulade.
Brush the roll with the beaten egg and place it on a baking sheet lined with parchment paper.
Bake in a preheated oven at 350°F (180°C) for 25-30 minutes, or until golden brown.
Let it cool for a few minutes before slicing and serving.
