Form the mixture into equally sized meatballs. Heat olive oil in a skillet over medium heat. Brown the meatballs on all sides until golden brown and cooked through.
Meanwhile, cook the rice in salted water according to package instructions. Once cooked, stir in the grated cheese until it's completely melted and the rice becomes creamy.
To serve, place the cheesy rice on a plate and arrange the meatballs on top. Garnish with fresh parsley.
