Shape the meat mixture into equal-sized meatballs and place them on a tray.
Heat olive oil in a skillet over medium heat. Cook the meatballs, turning occasionally, until golden brown and cooked through.
Meanwhile, peel the potatoes, cut them into chunks, and boil them in lightly salted water until tender. Drain well.
Mash the cooked potatoes with a potato masher. Stir in the milk and butter until smooth and creamy. Season with salt to taste.
Serve the meatballs with the mashed potatoes, and garnish with fresh, finely chopped parsley.
