In a bowl, combine the ground meat, breadcrumbs, egg, finely chopped onion, garlic, and parsley. Season with salt and pepper.
Shape the mixture into small meatballs and place them on a plate.
Heat the olive oil in a large skillet over medium heat. Cook the meatballs on all sides until golden brown. Set aside.
Meanwhile, rinse the rice in cold water, then transfer it to a saucepan. Add the water and a pinch of salt.
Bring the rice to a boil, then reduce the heat to low, cover, and simmer for 12-15 minutes, or until the water is completely absorbed.
Serve the meatballs with the rice. Garnish with fresh parsley. You can also serve a fresh salad or tomato sauce on the side.
