Meanwhile, cook the rice noodles according to the package directions. Drain and rinse with cold water to prevent sticking.
In a small bowl, whisk together the soy sauce and a little grated ginger. This mixture can be used as a dipping sauce or drizzled over the rice noodles when serving.
To serve, divide the rice noodles among bowls. Top with the cooked meatballs and garnish with fresh cilantro.
Serve immediately while warm. Offer extra soy sauce for dipping, if desired.
