Finely chop the sun-dried tomatoes, olives, and garlic. Heat the olive oil in a small skillet over medium heat. Sauté for 2-3 minutes, until fragrant.
Wash the arugula. Julienne the red bell pepper.
Season the beef patties with salt and pepper on both sides. Heat a skillet over medium heat and cook the patties for 3-4 minutes per side, or until browned.
When the patties are almost cooked through, crumble the feta cheese over them. Cover and let the cheese melt slightly.
Toast the hamburger buns in a skillet until the insides are golden brown and crispy.
Assemble the burgers: place the arugula on the bottom bun, followed by the feta-topped beef patty, the sun-dried tomato and olive mixture, and the julienned bell pepper.
Top with the other half of the bun and gently press down. Serve immediately with sweet potato fries or a fresh salad.
