Season the beef patties with salt and pepper on both sides. Heat olive oil in a skillet over medium-high heat and cook the patties for 3-4 minutes per side, or until golden brown.
Toast the hamburger buns until the cut sides are golden brown and slightly crispy.
Chop the black olives and set aside for assembling the burgers.
Slice the tomatoes and red onion, and prepare the arugula leaves.
Assemble the burgers: Spread garlic yogurt sauce on the bottom bun, then layer with arugula, the beef patty, feta cheese, chopped olives, tomato slices, and red onion slices.
Top with the upper bun and gently press down. Serve immediately with sweet potato fries or a fresh salad.
