Pour the apple juice into a large container and add the sugar. Stir until the sugar is completely dissolved.
Zest the limes, then juice them. Add both the zest and juice to the apple juice mixture.
Add the finely chopped fresh mint and orange zest to give the drink a unique citrus flavor.
Add the yeast and mix well. The yeast will start the fermentation process.
Cover the container, but leave a small gap for gases to escape. Let it ferment at room temperature for 7-10 days.
Once fermentation is complete, strain the drink to remove the mint and orange zest.
Pour the finished cider into sterilized bottles and seal them tightly.
Chill the cider in the refrigerator for another 2-3 hours, then serve cold, garnished with lime wedges.
