Wash and peel the tomatillos, then cut them in half.
Heat the olive oil in a medium skillet over medium heat. Cook the tomatillos and green chili pepper for 5-7 minutes, or until slightly charred.
Add the finely chopped red onion and garlic, and sauté for another 2 minutes.
Transfer all the ingredients to a blender or food processor. Add the freshly squeezed lime juice and cilantro.
Blend until smooth or leave it chunkier, depending on your preferred consistency.
Season with salt and pepper, then let it cool.
