Halve the avocados, remove the pits, and scoop out the flesh. Mash with a fork and combine with a pinch of salt, pepper, and chopped cilantro.
Thinly slice the jalapeño peppers. Slice the tomatoes and red onion into thin rounds. Prepare the lettuce leaves.
Season the ground beef patties with salt and pepper on both sides. Cook in a skillet or on a grill for 3-4 minutes per side, until a golden-brown crust forms.
When the patties are almost done, place a slice of cheddar on each and cover to let the cheese melt.
Toast the hamburger buns in a skillet or on a grill until the insides are golden brown and crispy.
Assemble the burgers: spread the bottom bun with a tablespoon of salsa, top with a lettuce leaf, the cheesy beef patty, avocado cream, jalapeño slices, tomatoes, and red onion.
Place the top bun on and gently press down. Serve immediately with tortilla chips or corn salad.
