In a bowl, combine the ground beef with salt, black pepper, ground cumin, minced garlic, and one tablespoon of olive oil. Form into 4 equal-sized patties.
In a hot skillet or on a grill, cook the patties for 3-4 minutes on one side, then flip.
After flipping, drizzle the patties with a little lemon juice to brighten the flavors.
Halve the hamburger buns (pita or brioche) and spread butter on the cut sides. Toast in a skillet until golden brown.
Spread tahini on the bottom half of each bun, then top with a layer of fresh cilantro.
Place a cooked patty on top, then pile on tomato slices, cucumber rounds, and thinly sliced red onion.
Spread hummus on the top half of each bun before closing the burgers.
Serve immediately with French fries or Middle Eastern spiced roasted eggplant.
