In a large bowl, whisk together the flour, cocoa powder, baking powder, sugar, and a pinch of salt. It's best to combine the dry ingredients first to ensure an even batter.
In another bowl, whisk the eggs, then add the milk, melted butter, vanilla extract, and mint extract. Mix well until all the flavors are evenly distributed.
Pour the wet ingredients into the dry ingredients and stir until just combined. Avoid overmixing, or the waffles may become tough. Let the batter rest for 10 minutes.
Meanwhile, chop the dark chocolate or use chocolate chips. Gently fold the chocolate into the batter just before cooking to prevent it from melting completely while resting.
Preheat the waffle iron and lightly grease it. Pour in a portion of the batter and cook for 4-5 minutes, or until the waffles are golden brown and crispy on the outside, and soft on the inside. The melting chocolate chips will release a fantastic aroma.
Serve the waffles on their own or drizzled with extra dark chocolate. Whipped cream is also delicious, but this mint chocolate version is a special treat in itself.
