In a saucepan, heat the apple juice over medium heat. Add the cinnamon stick and cloves.
Simmer on low heat for 5-7 minutes to allow the spices to infuse the apple juice.
Remove from heat and stir in the honey. Let it cool slightly.
Strain the drink to remove the spices, then refrigerate for at least 30 minutes to chill thoroughly.
Before serving, top with sparkling mineral water and add ice cubes for a refreshing effect.
Garnish with fresh mint leaves and orange slices. Serve immediately.
