Bring 250 ml of water to a boil, then remove from heat.

In a large pitcher, pour in the remaining cold water, the freshly squeezed lemon juice, and the cooled mint-honey mixture.
Add sparkling water and stir well.
Pour into glasses, add ice cubes, and garnish with fresh mint leaves and lemon slices.
