Wash the fresh mint and finely chop. Mince or press the garlic.
In a medium bowl, combine the tahini, lemon juice, and olive oil. Add a little water and whisk until smooth.
Add the chopped mint, minced garlic, salt, and pepper. Mix well to combine.
If the sauce is too thick, add a little more water to reach the desired consistency.
Serve chilled with fresh vegetables, grilled meats, or pita bread.
