During the last minute of cooking, place a slice of Monterey Jack cheese on each patty and let it melt.
In another skillet, melt the butter and sauté the finely chopped red onion over medium heat until golden brown and caramelized.
Halve the hamburger buns and lightly toast them in a dry skillet or on a grill.
Spread mayonnaise and Dijon mustard on the bottom half of each bun, then top with a lettuce leaf.
Place the cheesy patty on top of the lettuce, then sprinkle with the caramelized onions.
Add tomato slices, pickled cucumber slices, and chopped jalapeño pepper for a spicy kick.
Top with the other half of the bun and serve immediately with French fries or a fresh salad.
