Heat the olive oil in a large pot or Dutch oven over medium heat. Sauté the diced onion and minced garlic until softened.
Add the cubed lamb and brown on all sides.
Stir in the spices, ensuring the lamb is well coated.
Add the sliced carrots, dried apricots, and chickpeas. Pour in the crushed tomatoes and chicken broth.
Cover the pot and simmer on low heat for 1.5-2 hours, or until the lamb is fork-tender.
Garnish with fresh parsley and serve hot with couscous or crusty baguette.
