500 g All-purpose flour
7 g Dry yeast
1 tbsp Sugar
2 tsp Salt
250 ml Lukewarm water
50 g Melted butter
100 g Mozzarella cheese
3 tbsp Baking soda

    Preparation Steps

    In a bowl, combine the flour, dry yeast, sugar, and salt. Add the lukewarm water and melted butter, then mix until a smooth dough forms.

    Knead the dough for 8-10 minutes until it becomes smooth and elastic. Cover and let it rise in a warm place for 1 hour, or until doubled in size.

    Divide the risen dough into 8 equal portions. Roll each portion into long ropes and shape them into pretzel shapes.

    Bring 1 liter of water to a boil, then remove from the heat and add the baking soda (be careful, it will foam!).

    Dip each pretzel into the baking soda water for 30 seconds, then remove and place on a baking sheet lined with parchment paper.

    Cut the mozzarella into small pieces and place them in the center of the pretzels, forming small pockets.

    Bake the pretzels in a preheated oven at 400°F (200°C) for 15-18 minutes, or until golden brown and crispy. Best served fresh.
