Clean and thinly slice the mushrooms. Melt the butter in a skillet over medium heat, then add the mushrooms. Season with salt and pepper, and sauté for 5-7 minutes, or until golden brown.
Prepare the vegetables: wash the lettuce leaves, and slice the tomatoes and red onion into thin rings.
Season the beef patties with salt and pepper on both sides. Preheat a skillet or grill pan over medium heat and cook the patties for 3-4 minutes per side, until a golden-brown crust forms.
When the patties are nearly done, place a slice of cheddar cheese on each and cover to allow the cheese to melt.
Toast the hamburger buns in a skillet or on a grill pan until the cut sides are golden brown and crispy.
Assemble the burgers: spread mayonnaise on the bottom bun, then add the lettuce, cheesy patty, sautéed mushrooms, tomato, and red onion. Add ketchup to taste.
Top with the other half of the bun and gently press down. Serve immediately with fries or a fresh salad.
