500 g All-purpose flour
2 tbsp Dijon mustard
1 tbsp Italian herb mix
20 g Fresh yeast
10 g Sugar
250 ml Lukewarm water
2 tbsp Olive oil
1 tsp Salt
1 tsp Baking soda
1 l Water for boiling

    Start by preparing the dough: In a large bowl, combine the flour and salt.

    Add the sugar to the lukewarm water, then crumble in the yeast. Stir and let it sit for 5-10 minutes, until the yeast becomes foamy.

    Pour the yeast mixture into the flour, then add the olive oil and Dijon mustard. Mix well, then knead the dough by hand or with a dough hook for about 10 minutes, until smooth and elastic.

    Shape the dough into a ball, place it back in the bowl, and cover with a damp kitchen towel. Let it rest for 1 hour to rise.

    Once the dough has risen, turn it out onto a lightly floured surface and divide it into 8-10 portions. Roll each piece into a rope, then shape into pretzels.
