500 g All-Purpose Flour
7 g Active Dry Yeast
1 tbsp Sugar
2 tsp Salt
250 ml Lukewarm Water
50 g Melted Butter
2 tbsp Dijon Mustard
3 tbsp Baking Soda

    In a large bowl, combine the flour, dry yeast, sugar, and salt. Add the lukewarm water, melted butter, and Dijon mustard. Mix until a dough forms.

    Knead the dough for 8-10 minutes until smooth and elastic. Cover and let rise in a warm place for 1 hour, or until doubled in size.

    Divide the risen dough into 8 equal pieces. Roll each piece into a long rope and shape into a pretzel.

    Bring 1 liter of water to a boil. Remove from heat and stir in the baking soda (be careful, it will fizz!).

    Dip each pretzel into the baking soda water for 30 seconds. Remove and place on a baking sheet lined with parchment paper.

    Brush the tops of the pretzels with mustard, ensuring each one is well coated.

    Bake the pretzels in a preheated oven at 400°F (200°C) for 15-18 minutes, until golden brown and crispy. Best served fresh.
