1 tsp Salt
2 tsp Mustard seeds
200 g Butter
150 g Sour cream
25 g Yeast
1 tsp Sugar
100 ml Lukewarm milk
1 Egg
100 g Grated cheese
1 Egg for topping
1 tsp Mustard seeds for topping

    In lukewarm milk, mix in the sugar, then crumble in the yeast. Let it stand for 10 minutes until foamy.

    In a large bowl, sift in the flour, add the salt and mustard seeds, then rub in the cold butter until the mixture resembles breadcrumbs.

    Pour in the proofed yeast mixture, sour cream, and whole egg. Knead the dough until it becomes elastic and smooth.

    Mix the grated cheese into the dough, then cover and let rise in a warm place for about 1 hour.

    On a floured surface, roll out the dough to about 2 cm thickness, then fold it over itself several times to create layers.

    Roll out again to 2 cm thickness, then use a round cookie cutter to cut out the scones. Place them on a baking sheet lined with parchment paper.

    Brush the tops with beaten egg, then sprinkle with mustard seeds. Bake in a preheated oven at 350°F (180°C) until golden brown, about 20-25 minutes.
