In a bowl, combine the grated apples, sugar, vanilla sugar, cinnamon, and rolled oats. Let the mixture stand for a few minutes to allow the flavors to meld.
On a lightly floured surface, roll out the puff pastry into a thin rectangle.
Evenly spread the oatmeal-apple filling over the center of the pastry, ensuring the layer isn't too thick.
Fold the edges of the pastry over the filling, then flip the strudel so the seam is facing down. Brush the top with beaten egg and sprinkle with a little rolled oats for decoration.
Preheat the oven to 350°F (180°C) and bake the strudel for 25-30 minutes, or until golden brown.
Let the strudel cool slightly before slicing. Dust with powdered sugar before serving.
