Add the honey, vanilla extract, and milk. Mix well until a uniform mixture forms. Tip: If the mixture is too dry, add a little more milk, one tablespoon at a time.
Let the mixture stand for 10 minutes to allow the oats to soften slightly and absorb the moisture.
With damp hands, form small balls from the mixture. This will help prevent the dough from sticking to your hands.
Roll the balls in the remaining shredded coconut, ensuring they are coated on all sides.
Place the finished balls on a tray and refrigerate for at least 30 minutes to allow them to firm up and the flavors to meld.
