Gradually stir in the melted coconut oil to make the batter softer.
Preheat your waffle iron to medium heat and lightly grease with coconut oil or butter.
Pour a portion of the batter onto the center of the waffle iron (about one ladleful), then close the lid and cook until golden brown, about 3-4 minutes.
When done, carefully remove the waffle with a spatula and place on a wire rack to cool slightly to maintain crispness.
Serve fresh with fruits, yogurt, or a drizzle of honey.
