Preheat the oven to 350°F (180°C). Prepare three cake pans by greasing and flouring them.
In a large bowl, whisk together the flour, baking powder, and salt.
In another bowl, cream together the butter and sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition.
Gradually add the dry ingredients to the wet ingredients, alternating with the milk, until a smooth batter forms.
Divide the batter into three equal portions. Add food coloring to each portion, creating progressively deeper shades of pink and purple for the desired ombre effect.
Pour the colored batters into the prepared pans and bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean. Let the cake layers cool completely in the pans before frosting.
For the frosting, whip the heavy cream until stiff peaks form. In a separate bowl, combine the cream cheese, powdered sugar, and vanilla extract. Gently fold in the whipped cream.
Layer the cake layers with the cream cheese frosting, starting with the lightest shade. Frost the top and sides of the cake evenly.
Decorate with flowers, edible pearls, or sugar decorations as desired. Chill the cake for at least 1 hour to allow the layers to set.
