In another bowl, whisk together the egg yolks, cream cheese, and baking powder until smooth.
Gently fold the egg white mixture into the cream cheese mixture, being careful not to deflate the whites.
Spoon small dollops of the batter onto a baking sheet lined with parchment paper.
Preheat the oven to 300°F (150°C) and bake for 25-30 minutes, or until golden brown.
Let cool completely before serving as a sandwich base or enjoying on its own.
