Prepare all the ingredients. Measure out the orange blossom water and break the chocolate into smaller pieces.
Separate the eggs, placing the egg whites in a clean bowl. In another bowl, whisk together the egg yolks, sugar, vanilla sugar, and orange blossom water.
Pour the milk and butter into a saucepan and heat over medium heat. Do not let the mixture boil; just warm it gently.
Place the chocolate and butter in a small bowl and melt over a double boiler (bain-marie). Once melted, pour the chocolate into the egg yolk mixture and mix well.
Beat the egg whites until stiff peaks form. Gently fold the whipped egg whites into the chocolate mixture.
Sift the flour and gradually add it to the chocolate mixture. Mix until well combined.
Grease a soufflé dish with butter and pour in the chocolate mixture.
Bake in a preheated oven at 350°F (180°C) for 20-25 minutes, or until the soufflé has risen nicely and is golden brown.
Once baked, let it cool slightly before serving warm. If desired, sprinkle with a little extra orange blossom water.
