Add the vegan butter, orange juice, and orange zest. Knead until a smooth dough forms.
Shape the dough into a log, wrap it in plastic wrap, and refrigerate for 30 minutes to firm up.
Slice the dough into 1 cm thick rounds and arrange them on a baking sheet lined with parchment paper.
Bake in a preheated oven at 350°F (180°C) for 12-15 minutes, or until the cookies are golden brown.
Let the cookies cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.
Serve on their own or with a hot beverage like tea or coffee.
