Preparation: Thoroughly wash two fresh jalapeño peppers and slice them. Remove the seeds if you prefer a milder sauce. Peel and finely grate the ginger and mince the garlic.
Sautéing: Heat a little oil in a medium saucepan over medium heat. Add the garlic, ginger, and jalapeño, and sauté for 2-3 minutes until fragrant.
Adding Liquids: Pour in the orange juice, water, rice vinegar, and soy sauce. Add the brown sugar and stir well to combine.
Cooking: Simmer the sauce over medium heat for 10-12 minutes, or until it has slightly thickened and the flavors have melded.
Pureeing: If you prefer a smooth sauce, use an immersion blender or regular blender to puree until smooth. Add a little water if it's too thick.
Serving: Serve the sauce warm or cold with grilled meats, fish, or vegetables. Garnish with fresh cilantro, if desired.
