250 g All-Purpose Flour
80 g Granulated Sugar
1 Orange Zest
1 Lemon Zest
1 packet Baking Powder
1 pinch Salt
150 g Unsalted Butter, softened
1 Egg
200 g Seedless Raspberry Jam

    Prepare all of your ingredients. Allow the butter to soften at room temperature for easier handling. Whisk the egg and sugar together until pale.

    In a mixing bowl, combine the flour, orange zest, lemon zest, baking powder, and a pinch of salt. This will be your dry ingredient mixture.

    Add the whisked egg mixture and softened butter to the dry ingredients. Work the dough together until it forms a cohesive mass. If necessary, add a little more flour to prevent the dough from becoming too sticky.

    Wrap the dough in plastic wrap and chill in the refrigerator for at least 30 minutes.

    Once the dough has chilled, roll it out on a lightly floured surface to about 5 mm (approximately 1/4 inch) thick. Use a cookie cutter to cut out the Linzer cookies. Cut out the centers of half of the cookies with a smaller cutter to create a window for the jam.

    Bake the cookies in a preheated oven at 350°F (180°C) for 8-10 minutes, or until they are golden brown.

    After the cookies have cooled, spread the solid cookie bases with jam and top with the cut-out cookies. Dust the assembled cookies with a pinch of ground cinnamon, if desired.
