Pour the apple juice into a medium saucepan and begin to heat over medium heat.
Add the cinnamon stick and half of the fresh mint leaves.
Simmer the cider over low heat for 10-15 minutes to allow the flavors to meld.
Remove from heat, then stir in the honey, freshly squeezed orange juice, and vanilla extract.
Strain the cider through a fine-mesh sieve to remove the cinnamon stick and mint pieces.
Chill the cider, then pour it into glasses filled with ice cubes.
Garnish with fresh mint leaves and serve immediately.
