In a large bowl, combine the flour, powdered sugar, vanilla sugar, and baking powder.
Add the cold butter and quickly cut it into the flour mixture using a pastry blender or your fingertips until it resembles coarse crumbs.
Add the egg yolks and grated orange zest. Knead the dough until it comes together and forms a smooth ball.
Wrap the dough in plastic wrap and refrigerate for at least 30 minutes to rest.
Preheat the oven to 350°F (180°C). Roll out the dough to about 3 mm thick on a lightly floured surface and cut out circles using a cookie cutter.
Place the linzer cookies on a baking sheet lined with parchment paper and bake for 10-12 minutes, or until lightly golden brown around the edges.
In a bowl, mix together the ricotta cheese, sour cream, and freshly squeezed orange juice. Let it chill in the refrigerator for 10 minutes.
Once the linzer cookies have cooled, spread half of them with orange jam, then top with a spoonful of the ricotta filling.
Place another linzer cookie on top to create a sandwich. Dust the tops with powdered sugar.
