Pour the apple juice into a medium-sized saucepan and begin to heat over medium heat.
Slice the orange into thin slices and add them to the apple juice base.
Add the cinnamon stick, cloves, star anise, and a pinch of nutmeg to the pot.
Add a tablespoon of honey and the vanilla extract, then stir well.
Simmer over low heat for 10-15 minutes, being careful not to boil, so that the flavors meld together nicely.
Remove from heat and let stand for a few minutes to allow the spices to release their aromas even further.
Strain the cider and pour into mugs or heat-resistant glasses.
Garnish with a fresh orange slice or cinnamon stick, and serve warm.
