Pour the apple juice into a medium saucepan and begin to heat over medium heat.
Halve the orange and squeeze out the juice. Add the squeezed orange peels to the saucepan to get a more intense citrus flavor.
Slice the vanilla bean in half lengthwise and scrape out the seeds. Add both the seeds and the pod to the saucepan.
Add the cinnamon stick, cloves, and a pinch of nutmeg, then stir to combine.
Simmer the cider over low heat for 15-20 minutes to allow the flavors to meld. Do not let it boil; it should just gently simmer.
Remove from the heat and stir in the honey. Stir well until completely dissolved.
Strain the cider to remove the spices and orange peels. Then, pour it into glasses and serve warm.
